Summary

The King Trumpet Oyster Mushroom, sometimes called French Horn, Trumpet Royale, and King Brown Mushroom, is also known by its Latin name, Pleurotus eryngii. This native Mediterranean mushroom is a highly sought-after tasty edible culinary delight, rich in Unami flavour. It is the largest of the oyster mushroom (Pleurotus) family, and the King Trumpet is also unique in that it is an NTF—a nematode-trapping fungus growing as a parasite on the roots of herbaceous plants. Like most other Oyster mushrooms, it is also a saprotrophic fungus growing on decaying wood and organic matter.

King Trumpet Mushroom Description and Taste

The King Trumpet mushroom is instantly recognisable. Its thick, elongated, and tasty stem, often compared to that of a trumpet or a small club, makes it stand out from other mushrooms. The stem can grow long, typically from 4 to 8 inches (10 to 20 centimeters). It is usually pure white in color and has a firm, meaty texture.

At the top of the King Trumpet stem, there is a small, rounded cap, usually dark brown in colour and may have a slightly convex shape. Unlike some other mushroom varieties, the cap of the King Trumpet is not very prominent and often blends in with the stem. When fully grown, the King Trumpet mushroom resembles a thick, white cylinder with a small brownish-coloured cap at the top.

What are the Uses of King Trumpet mushrooms?

The versatility of the King Trumpet mushrooms makes them a highly sought-after favourite ingredient amongst chefs. As well as being incredibly popular in the kitchen, there are plenty of potential medicinal and health benefits associated with the King Trumpet mushroom:

Immune Support: King Trumpet Oyster mushrooms contain beta-glucans, compounds that may help modulate the immune system and enhance its function. Consuming foods rich in beta-glucans, such as King Trumpet mushrooms, may help support overall immune health and improve the body’s ability to defend against infections and diseases.

Anti-Inflammatory Properties: Some studies suggest that certain compounds found in King Trumpet mushrooms, such as ergothioneine and erinacines, possess anti-inflammatory properties. These compounds may help reduce inflammation in the body, which is associated with various chronic diseases and conditions.

Antioxidant Activity: King Trumpet mushrooms are rich in antioxidants, including phenolic compounds and polysaccharides, which help neutralize harmful free radicals in the body. By scavenging free radicals, antioxidants help protect cells from oxidative stress and damage, potentially reducing the risk of chronic diseases such as cancer, heart disease, and neurodegenerative disorders.

Cardiovascular Health: Some research suggests that consuming King Trumpet Oyster mushrooms may have beneficial effects on cardiovascular health. Compounds found in these mushrooms, such as beta-glucans and sterols, may help lower cholesterol levels, improve blood lipid profiles, and promote overall heart health.

Digestive Health: King Trumpet mushrooms are a good source of dietary fiber, which plays a crucial role in digestive health. Fiber helps regulate bowel movements, promotes the growth of beneficial gut bacteria, and may reduce the risk of digestive disorders such as constipation, diverticulosis, and colon cancer.

Neuroprotective Effects: Certain compounds found in King Trumpet mushrooms, such as erinacines and hericenones, have been studied for their potential neuroprotective effects. These compounds may help stimulate nerve growth and repair, protect against neurodegenerative diseases such as Alzheimer’s and Parkinson’s, and improve cognitive function.

How to Store the King Trumpet Mushroom?

Proper storage is essential to maintain the freshness and quality of King Trumpet mushrooms. Here’s how to store them:

  1. Refrigeration: The best way to store King Trumpet mushrooms is in the refrigerator. Place them in a paper bag or a loosely closed plastic bag to allow for air circulation. Alternatively, you can wrap them in a paper towel and then place them in a perforated plastic bag. Avoid storing them in airtight containers or plastic bags without any ventilation, as this can cause them to become slimy and spoil more quickly.
  2. Temperature: Store King Trumpet mushrooms in the refrigerator’s main compartment, preferably in the crisper drawer. The optimal temperature for storing mushrooms is between 32°F to 38°F (0°C to 3°C). Avoid placing them in the coldest part of the refrigerator, such as near the back or in the freezer compartment, as extreme cold can damage the mushrooms.
  3. Moisture: Mushrooms are prone to moisture buildup, which can lead to spoilage. To prevent excess moisture accumulation, avoid washing King Trumpet mushrooms before storing them. Instead, wait until you’re ready to use them, and then gently wipe them clean with a damp paper towel or brush off any dirt. Excess moisture can cause the mushrooms to become slimy and degrade more quickly.
  4. Ventilation: King Trumpet mushrooms require proper ventilation to maintain their freshness. If storing them in a plastic bag, make sure it has some perforations or leave the bag slightly open to allow for air circulation. This helps prevent the buildup of moisture and allows the mushrooms to breathe, extending their shelf life.
  5. Use promptly: While King Trumpet mushrooms can be stored in the refrigerator for several days, they should be used as soon as possible for the freshest taste and texture. Avoid storing them for extended periods, as they will gradually lose their flavour and may begin to deteriorate.

By following these storage tips, you can keep your King Trumpet mushrooms fresh and flavourful for longer, ensuring that they’re ready to use whenever you’re craving their delicious taste and meaty texture.
